French cookware maker, Staub's take on a classic Moroccan tagine.

A tagine's conical shape makes a uniquely moist, hot environment for the dish being cooked. The base is wide and shallow, and the tall lid fits snugly inside. As the food cooks, steam rises into the cone, condenses, and then trickles down the sides back into the dish.

Use to make a classic Moroccan chicken tagine or your fave one-pot dish.

Made by Staub, French maker of enameled cast iron cookware out of an old artillery factory in Alsace since 1974.

I was skeptical about how much difference the conical lid would make, but the way it traps steam keeps the meat nearly falling apart without any extra liquid. Set it on a low simmer and the whole kitchen smells like the spice blend for hours.

The wide, shallow base means I can sear the meat directly on the stove before popping the tall lid on, which cuts down on extra pans. Everything comes out so tender and the juices don't seem to escape at all. It's become my go-to for weekend stews.

The wide, shallow base sits perfectly on my stovetop without wobbling, and the way the tall lid traps steam means my chicken came out fork-tender in under an hour. It's become my go-to for weekend stews, even if the clay-style design takes a bit of counter space.
