Use it in baked goods too, and be prepared for an extra depth of flavor, similar to that of brown sugar. Grown in the historic, rain-fed, sugarcane-growing Daund region, Diaspora Co's jaggery is grown and processed by Kantilal Randive, a well-known soil health expert.
