ソルガムシロップ作りのアパラチアの伝統は何世代にもわたって受け継がれ、イーストフォークの最初の拠点があったノースカロライナ州マディソン郡のいくつかの家族農場で今も息づいています。
隣の農場で育ったサトウキビから生のソルガムシロップを搾り出す、輓馬（ばんば）が動かす圧搾機を想像してみてください。その下で火を焚いた金属製の桶の周りに皆が集まる光景を。生のソルガムが甘く濃厚なシロップに煮詰まる間、昔話が交わされ、古い歌が新世代に伝えられます。
テネシー州バンパスミルズのロスファームズのカントレル家は、自農場でソルガムを栽培・加工し、分け合えるだけの量を作りました。

I was expecting regular molasses but this sorghum has a lighter, almost honey-like sweetness that doesn't overpower biscuits. Knowing it comes from a small family farm in Tennessee makes it feel worth the price. Already halfway through the jar.
The jar arrived sealed tight and the syrup has that deep, earthy sweetness you just don't get from the corn syrup stuff at the grocery store. Been stirring a spoonful into my morning oatmeal all week and it's genuinely the best I've had since my grandmother's.
I've been putting this on biscuits every morning since it arrived, and the flavor is way more complex than the corn syrup stuff from the grocery store. Knowing it comes from a family farm in Tennessee that still runs the old Appalachian process makes it worth the price.
