En 1993, Francis Gelb a fondé Sabre Paris avec l'ambition de proposer des couverts et des pièces de service aux couleurs et formes inattendues, fabriqués avec les matériaux et le savoir-faire les plus exigeants (issu d'une famille de métallurgistes, il y a appris la minutie nécessaire). En d'autres termes, il a redéfini ce que pouvait être l'intemporalité, élargissant les horizons pour y faire une place à la fantaisie.
