Jarabe de jengibre

I was skeptical about using a syrup in savory cooking, but a splash in my stir-fry glaze rounded everything out beautifully. It’s got that warm, spicy kick that’s hard to find in a bottle, and it’s become a regular on my shelf.

This syrup has saved me a dozen times mid-recipe when a dish needed just a hint of warmth and sweetness. The texture is nicely pourable, not too sticky, and it dissolves cleanly into both tea and marinades.

I’ve been drizzling this syrup over both roasted carrots and vanilla ice cream, and that warm spice somehow works magic on both. It’s thicker than I expected, so a little goes a long way in a marinade or a cocktail.
