Kandierte Schale

I've been dropping a few of these into my morning yogurt and the sweet-tart balance is spot on. Small-batch really shows in how soft the peel is instead of that hard candied texture you usually get.

The peels are thicker and more tender than the chewy dried stuff I used to buy, and they don't taste like pure sugar. I chopped a handful into shortbread and the little bits of orange and lemon held their shape without turning to mush in the oven.
